mmmmmmmmmm......good night sweetssssss....mmmmmmm....but i cant sleep. i lay wide awake. for about an hour still wondering if something is horrendously wrong with my system??? with some unsuccessful attempts of finding dat out and forcing myself to sleep i got bored and woke up at bang 1.30 midnight...ah haaa....must b that extra cuppa coffee or a nasty bout of acidity I thought, but no. nothing of dat sort!!! and then i suddenly recollect from my oh so chweeet rusted mind dat i have indeed not had my dinner at night!!! so simple....so i go straight n raid d fridge. alaaas find nothing appealing...neither did opening those ready to eat meal packets attract my attention....nor was i in a mood to cook up an elaborate affair, ahh lazy bum me...hehehe...ummm??? eating fruits n sipping on a cold glass of milk was an obvious option....but not for my ever so naughty n greedy taste buds always latching on for the most scrumptious thing around. so i look around, carefully this time finding or rather discovering knick knacks that cud go into ma bowl of soul calming meal of d night.
I grilled some amazing roti pizza wrap at this hour and had a bite of that haven, with the crust: marvelous! Crisp crust, chewy interior, great flavor. Takes me a bit to get through a bite, but is it ever worth it.Nice crumb...with some monaco biscuits in it and some butter to slather on it.A care package to tide me over till morn.I roasted red peppers n they tasted delicious, even without the addition of cream. I think next time I'll add another roasted jalapeno to the mix along with a touch more hot sauce. It's tasty, but I'd like just a hint more kick to it than it has right now. Of course, the red peppers themsleves are very sweet currently, as it is the height of the october heat so if I make this in winter, we'll have to have tasting as we puree and combine to make sure we don't go overboard. If I had a nice loaf of Italian bread, I could have stuffed in all this in it...Alas, that will have to wait until my next food mall trip.
"What will you be doing with all those peppers?" asked the woman behind me in the checkout line at the SPINACH food mall yesterday.
"I'm making some steamy wok at home with a veg steak... "With cucumbers in it? That seems a little..." She paused here, no doubt trying to find something to say other than "weird".
"No, the cucumbers will be going towards another dish"
"I think you're right about that. The pepper steak sounds delicious."
"I'm sure it will be." and i sneaked out from her sight to a different counter for my payments b4 she could haunt me with her further questions invading my kitchen privacy. hope she reads this blog. hehehe.....
oh yes...back to d meal procedure...i had mixed in some diced fresh dill, some salt and pepper to taste, and garnished with more fresh dill. I also added other ingredients onions - garlic, and some spices(bay, thyme). The onions and garlic were sweated in a touch of olive oil over low heat while making d wok this morning.i I reheated them in a pan. While that was going on, I gave the peppers a rough chop and scooped out d sweet potato, baked earlier in the day out of its skin. It's so soft that nothing is really required for it.
When the onions were soft i added the peppers, some sprouts spices ,sweet potato, with a dash of lime and a touch of Tabasco n placed them amidst the chapatis spreading the mix evenly n then rolled it all up....and grilled the wraps in batches in the microwave. In this case, served with a dollop of sour cream or yogurt as a dip and garnished with chives and fresh basil, I had it as it was. If it's too hot to cook, or if you're one of those raw food people, it's not bad; infact its dead easy to prepare, lowfat, and low calorie wraps stuffed with asparagus spears and feta d makings for it r d same but with a bit of variation and yesss...go in for some for garlic-parsley potatoes with cheese spread in a leftover bread...add a hint of majoram for spice and some raw onion rings... I bet u ll ask for more...I finished off every scrap n bit of food i made. and now...???
some blissful sleep. zzzzzzzz...
